Ingredients:

  • 1 can (5 oz) of tuna, drained
  • 1/4 cup diced cucumber
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup diced Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Large lettuce leaves (such as iceberg, Romaine, or butter lettuce)

Instructions:

  1. In a bowl, combine the drained tuna, diced cucumber, red bell pepper, red onion, Kalamata olives, feta cheese, and chopped parsley.
  2. In a separate small bowl, whisk together the olive oil and lemon juice.
  3. Season with salt and pepper to taste.
  4. Pour the olive oil and lemon juice mixture over the tuna and vegetable mixture.
