Ingredients:
- 16 large cremini or button mushrooms, stems removed
- 1 cup chopped spinach
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped black olives
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms by gently wiping them with a damp paper towel.
- Carefully remove the stems and create a hollow space in each mushroom cap to make room for the stuffing.
- Finely chop the mushroom stems and set aside.
