Ingredients: 

For the crust:

  • 1 ½ cups almond flour
  • 1 large egg
  • 2 tablespoons olive oil
  • ½ teaspoon salt

For the filling:

  • 10 oz (about 280g) fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill
  • ½ teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin with cooking spray or use cupcake liners.
  2. To make the crust, in a mixing bowl, combine almond flour, egg, olive oil, and salt. Mix until a dough forms. Divide the dough into 24 equal portions.
  3. Press each portion of the dough into the bottom and sides of the mini muffin cups, forming a little crust for the filling.
  4. For the filling, heat olive oil in a pan over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  5. Add chopped spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  6. In a separate bowl, mix together the wilted spinach, crumbled feta cheese, dried dill, dried oregano, salt, and pepper.
  7. Spoon the spinach and feta mixture into the almond flour crusts in the muffin tin, filling them to the top.
  8. Bake in the preheated oven for 15-18 minutes or until the crust is golden and the filling is set.
  9. Remove the Spanakopita Bites from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
