Ingredients:
For the crust:
- 1 ½ cups almond flour
- 1 large egg
- 2 tablespoons olive oil
- ½ teaspoon salt
For the filling:
- 10 oz (about 280g) fresh spinach, chopped
- 1 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried dill
- ½ teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin with cooking spray or use cupcake liners.
- To make the crust, in a mixing bowl, combine almond flour, egg, olive oil, and salt. Mix until a dough forms. Divide the dough into 24 equal portions.
- Press each portion of the dough into the bottom and sides of the mini muffin cups, forming a little crust for the filling.
- For the filling, heat olive oil in a pan over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add chopped spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a separate bowl, mix together the wilted spinach, crumbled feta cheese, dried dill, dried oregano, salt, and pepper.
- Spoon the spinach and feta mixture into the almond flour crusts in the muffin tin, filling them to the top.
- Bake in the preheated oven for 15-18 minutes or until the crust is golden and the filling is set.
