Ingredients:

  • 1 large cucumber, diced
  • 2 medium tomatoes, diced
  • 2 ripe avocados, diced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh cilantro or parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (or vinegar of your choice
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the diced cucumber, diced tomatoes, diced avocados, thinly sliced red onion, and chopped cilantro or parsley.
  2. In a small bowl, whisk together the olive oil and lemon juice (or vinegar). Season with salt and pepper to taste.
