A keto-friendly version of the classic tabbouleh salad, using cauliflower rice as a base and plenty of fresh herbs for an authentic taste. Tabbouleh is a Middle Eastern salad with ancient origins, dating back to the Roman era.

Its name is derived from the Arabic word “tabil,” which means seasoning. Historically, it was a symbol of hospitality,  often served to guests as a sign of welcome.

Today, it has become a beloved staple in many cultures.

To make this keto version, finely chop fresh parsley, mint, and cilantro to create a herbaceous blend. Add diced tomatoes, cucumbers, green onions, and toss with lemon juice, olive oil, and seasonings. Gently fold in the cauliflower rice and let the flavors meld for a few minutes before serving.

Nutritionally, Cauliflower Tabbouleh is a powerhouse of vitamins, minerals, and antioxidants, providing a low-carb option packed with fiber and nutrients.

It’s an excellent source of vitamin C, K, and folate, promoting overall well-being.

For optimal freshness, store the tabbouleh in an airtight container in the refrigerator. It can be enjoyed as a refreshing side dish, a light lunch, or paired with grilled proteins for a complete meal.

Famous celebrity chef and health enthusiast, Jamie Oliver, has expressed his love for this keto Cauliflower Tabbouleh with Fresh Herbs.

He appreciates its creative adaptation of a traditional favorite while still celebrating the essence of Middle Eastern cuisine.
