  • 4 medium-sized artichokes
  • 1 cup grated Parmesan cheese
  • 1/2 cup almond flour (or breadcrumbs for non-keto version)

  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Start by preparing the artichokes. Trim the stems and remove any tough outer leaves.
  3. Use a sharp knife to cut off the top third of the artichoke to expose the inner leaves.
  4. Use kitchen shears to trim the sharp tips of the remaining leaves.
  5. Spread the leaves gently to create a cavity in the center of each artichoke, removing the choke (the fuzzy part) if present.
  6. In a mixing bowl, combine the grated Parmesan cheese, almond flour (or breadcrumbs),  chopped parsley, minced garlic, lemon juice, and half of the olive oil.
  7. Season with salt and pepper to taste.
  8. Stuff the mixture into the cavities of the prepared artichokes, distributing it evenly among the leaves.
  9. Place the stuffed artichokes in a baking dish.
  10. Drizzle the remaining olive oil over the top of each artichoke.
  11. Add about 1/2 inch of water to the bottom of the baking dish to create steam during baking.
  12. Cover the baking dish with aluminum foil and bake in the preheated oven for about 45-60 minutes or until the artichokes are tender and the stuffing is golden brown.
  13. Once baked, remove the foil and broil the artichokes for a few minutes to get a crispy, golden top.
