Ingredients:
- 4 large bell peppers (any color)
- 1 lb (450g) ground turkey
- 1 cup crumbled feta cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced

- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: chopped fresh parsley for garnish
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Rinse them under cold water and set them aside.
- In a large skillet, heat one tablespoon of olive oil over medium heat.
- Add the chopped onions and garlic, and sauté until they become soft and translucent.
- Push the onions and garlic to one side of the skillet and add the ground turkey to the other side.
- Cook the turkey until it’s browned and fully cooked, breaking it apart with a spatula as it cooks.
- Once the turkey is cooked, mix it with the onions and garlic.
- Add the dried oregano, basil, paprika, salt, and pepper to the skillet.
- Stir everything together and cook for another 2 minutes to allow the flavors to meld.
- Remove the skillet from heat and let it cool slightly.
- Stir in the crumbled feta cheese, combining it with the turkey mixture.
- Rub the outside of the bell peppers with the remaining tablespoon of olive oil, and then stuff each pepper with the turkey and feta mixture.
- Place the stuffed bell peppers in a baking dish and cover it with aluminum foil.
- Bake in the preheated oven for 25-30 minutes or until the peppers are tender.
- Remove the foil during the last 5 minutes of baking to allow the tops of the peppers to brown slightly.
