Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Lemon zest (optional, for extra flavor)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a pan over medium heat, add the olive oil and minced garlic.
  3. Sauté for a minute until fragrant.
  4. Add the chopped spinach to the pan and cook until it wilts, about 2-3 minutes.
  5. Remove from heat.
  6. In a mixing bowl, combine the sautéed spinach, crumbled feta cheese, and dried oregano.
  7. Mix well, and add salt and pepper to taste.
  8. Lay the chicken breasts flat on a cutting board.
  9. With a sharp knife, make a horizontal slit in the thickest part of each chicken breast to create a pocket for the stuffing.
  10. Be careful not to cut all the way through.
  11. Stuff each chicken breast with the spinach and feta mixture, pressing down gently to close the pocket.
  12. Season the outside of the chicken breasts with salt, pepper, and lemon zest (if using).
  13. Place the stuffed chicken breasts on a baking sheet or in a baking dish.
  14. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  15. Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.
