Ingredients:
1 pound (450g) medium shrimp, peeled and deveined
2 ripe avocados, diced
1 cup diced tomatoes
1/2 cup diced red onion
1/4 cup chopped fresh cilantro
1/4 cup fresh lime juice (about 3-4 limes)
1/4 cup fresh lemon juice (about 2 lemons)
2 tablespoons olive oil
Salt and pepper to taste
Optional: diced jalapeño for some heat
Instructions:
- Cook the Shrimp: Bring a large pot of salted water to a boil.
- Add the shrimp and cook for about 2-3 minutes, until they turn pink and opaque. Avoid overcooking.
- Drain and rinse the shrimp under cold water to stop the cooking process.
- Marinate the Shrimp: In a large bowl, combine the cooked shrimp, diced tomatoes, red onion, and cilantro.
- Add the lime and lemon juice, olive oil, salt, and pepper. If desired, you can also add diced jalapeño for some heat.
- Mix well to ensure all the ingredients are coated with the citrusy marinade.
- Chill and Let Flavors Meld: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld together.
- During this time, the citrus juices will “cook” the shrimp.
- Add Avocado and Serve: Just before serving, gently fold in the diced avocado and cucumber (if using) to preserve their texture.
- Adjust salt and pepper if needed.
- Serve the ceviche in individual bowls or as a topping for lettuce leaves, and enjoy!
- Optional: diced cucumber for added crunc
