Ingredients: 

For the cauliflower crust:

  • 1 medium head of cauliflower, grated or processed into rice
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the toppings:

  • 1/2 cup tomato sauce (sugar-free)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sliced black olives
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup marinated artichoke hearts, chopped
  • 1/4 cup crumbled feta cheese
  • Fresh basil leaves for garnish
  • Extra virgin olive oil for drizzling

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet or pizza stone with parchment paper.
  2. Prepare the cauliflower crust by placing the grated cauliflower in a microwave-safe bowl.
  3. Microwave on high for 4-5 minutes or until the cauliflower is tender.
